Today was a do nothing day because tomorrow is going to be a full day at Sintra. Terry was cooking special dinner that he had seen on a food show he was watching and it looked interesting. It was a lot of prep work but it was worth it. The meal was as delicious as it looked.

Note: Terry used ground pork where it calls for pork mince. And for the 30g of Thai Red Curry paste, he used the whole package. Sweet chili sauce was the accompaniment.
